
	4 cups micro greens
	3 cups mixed field peas (recipe follows)
	4 skewers grilled shrimp (recipe follows)
	4 Tbs. pepper coulis (recipe follows)
	For the mixed field peas:
	1/3 cup red wine vinegar
	2 Tbs. sugar
	1 Tbs. Dijon
	1/2 tsp. red pepper flakes
	1/2 red onion, diced small
	2/3 cup olive oil
	3 cups mixed field peas, blanched
	3-4 slices bacon, diced & cooked
Divide greens evenly on plates. Top with portions of peas and shrimp. Garnish with coulis.
	For the mixed field peas:
	In a bowl, mix first six ingre-dents. Toss with peas and bacon. Set aside.
